Well, I just learned that Ke$ha was on an episode of "The Simple Life" and apparently later she barfed in Paris Hilton's closet and wrote a song about it. So obviously Paris Hilton (and, by extension, Nicole Richie) have gained massive cool points in my book.
Sometimes I wish there would be a show called "The Simple Lunch" and it would be a reality show about some fancy lady (me, probably) who made really simple, yummy lunches. Maybe I'll give a sales pitch to NBC. I'd imagine they need something witty and edgy to fill the gap left by 30 Rock (moment of silence, please).
First step in my Simple Lunch franchise: become really, really, ridiculously good at making simple lunches. These require minimal efforts and usually consist of heating up leftovers. Lucky for me, I had some leftover quinoa from the other night. I also had some nice mushrooms and some tomato sauce.
I cut up the mushrooms and then sauteed them in a bit of EVOO and put some tomato sauce over top et voilà! Un simple déjuner! (I just started French classes at Dublin's Alliance Française!!! Vive La France!) I sprinkled a little bit of parmesan cheese on top to finish it off.
Also, I realise this is my second post of the day--I am not setting a new precedent for myself, but I feel bad about neglecting this for 4 months--1/3 of a year!!--so this is my way of atoning. -

Mushroom Quinoa with Tomato Sauce
1/2 cup quinoa
3-4 cups water
1 cube vegetable stock (I used Knorr)
1/2 small yellow onion, diced
1 clove garlic, minced
4 small mushrooms, about 1/4 cup (I used forestière but use whatever is your favourite kind!)
1/4 tsp cumin
1/8 tsp paprika
pinch of salt and pepper to taste
1 tsp EVOO to cover the pan
1/8ish cup of tomato sauce
1 tsp parmesan cheese, grated
Boil the water and add in the stock cube. When stock is dissolved, add quinoa. Bring back up to a boil and then simmer for 10ish minutes, or until liquid is totally evaporated.
While quinoa is simmering, heat EVOO in a sauce pan. When heated, add in onions and sauté until almost translucent. Add in mushrooms and heat until soft. Add in garlic and sauté very lightly (fun fact: I almost always burn garlic. Don't do that! It's terrible!). Mix the veggies with the quinoa and add salt, pepper, paprika, and cumin to taste.
If you're lazy like me you'll just use canned tomato sauce but if you're adventurous you can make the sauce on your own with tomato purée (I don't know how to do that but fair play to you if you do). Simply spoon the tomato sauce over the quinoa and sprinkle some parmesan on top.
